Cajun Swai Sandwiches




  • 1 1/2 lbs swai fillets- rinsed and patted dry
  • 1 box (8.5oz) corn bread mix
  • 2 tbsp cajun seasoning
  • 1 egg
  • 1/2 cup all-purpose flour
  • Canola oil- for frying
  • 1 loaf French bread


  • 1 scallion- finely chopped
  • 1 clove garlic- finely chopped
  • 1 cup mayonnaise
  • 1 tbsp capers- finely chopped
  • 1 tsp cajun seasoning
  • 2 1/2 tsp lemon juice



Cut fillets in half; set aside.
In a pie plate, combine corn bread mix and cajun seasoning. In another pie dish lighly beat egg with 1 tbsp water to make an egg wash.
Dredge each fillet in the flour, dip into egg wash and coat with corn bread mixture. Set aside on a plate.
In a deep freyer or large pan, heat oil over medium to medium-high heat until it reaches 375 degrees. Fry fish until golden brown, about 6 minutes. Remove to plate lined with paper towels.

Cajun Remoulade:

In a small bowl, stir together all ingredients. Set aside.


Spread French bread with remoulade sauce. Build sandwiches with fried fish fillets and your favorite sandwich toppings.

Serving Suggestion

Serve with sweet potato fries.

Other Options

Substitute ciabatta bread for French bread.

Add garlic butter to toasted French bread for added flavor.
