Macadamian Nut Mahi Mahi with Mango Salsa

Ingredients

  • Salt and pepper
  • 1/4 cup macadamia nuts -- toasted and crushed
  • 3/4 cup panko breadcrumbs (asian market or asian section of market, used for breading)
  • 2 tbsp peanut oil

Instructions

Preheat oven to 350 degrees.
Season fish with salt and pepper.
Combine panko and macadamia nuts. press quickly and lightly onto fish. Heat oil in saute pan over medium to high heat and then brown fish on both sides. Finish in oven on baking sheet for about 8 to 10 minutes.

Serving Ideas

Serve with steamed bok choy, black or white rice, and mango salsa.
