Fish and Spicy Chips

Ingredients

  • 4 halibut fillet -- cooked as directed
  • 4 medium to large russet potatoes -- peeled
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp each: cayenne pepper, paprika, ground coriander
  • 3 tbsp olive oil

Instructions

Preheat oven to 400 degrees.
Slice potatoes length-wise into 1/8. Toss with olive oil.
Mix seasoning together and toss with potatoes.
Spread on baking sheet and place in oven.
Turn potatoes occasionally and roast until golden brown (approximately 30-45 minutes).

Serving Ideas

Serve with coleslaw, secret sauce for dipping, and fresh fruit platter.

Other Options

Can be seasoned with salt, pepper, fresh chopped rosemary, pinch of cayenne pepper and olive oil.
