Halibut Encroute

Ingredients

  • 4 halibut fillets
  • 1/2 cup button mushrooms -- sliced
  • 1/2 tsp dill, dry or 4 sprigs fresh dill
  • Fresh cracked pepper
  • 4 egg roll wrappers
  • 1 tbsp olive oil
  • 2 1/2 tbsp butter
  • 1 medium shallot -- finely chopped
  • 2 tbsp white wine
  • 1 lemon, juiced

Instructions

Preheat oven to 350 degrees.

Place wrappers on a flat surface and divide mushrooms and dill in center of wrap. Top with fresh cracked pepper. Place 1 fillet on top. Wet the edges of the wrapper and fold up like an envelope. Heat olive oil in a saute pan, lightly browning each side of packet and then bake in preheated oven for 6 to 10 minutes. Remove packets to a warm serving platter. Add butter to saute pan, melt, then add shallots and saute for 2 minutes. Add wine and lemon juice, stir and heat until it begins to bubble. Top halibut packets with sauce. Serve immediately.

Serving Ideas

Serve with lemon wedges, pea pods (sauteed or steamed), spinach salad or sauteed asian spinach.

Other Options

For a richer dish, add 1 to 2 teaspoons of butter on top of the fish before sealing packet. Add finely cut lengthwise (matchstick sized) vegetables of your choice (zucchini, peppers etc.). Add different herbs and spices.
