Halibut Almondine

Ingredients

  • 4 halibut fillets
  • 2 tbsp olive oil
  • 1/2 cup ground almonds
  • 2 tbsp lemon juice
  • 1/4 cup white wine
  • 2 tbsp butter

Instructions

Preheat oven to 400 degrees. Season halibut with salt and pepper; dredge in almonds. Heat olive oil in saute pan and lightly brown halibut on one side. Remove from pan and place on sheet pan, browned side up. Place in oven for 6-10 minutes until just firm to touch. Remove fish to a platter. On high, heat fish in saute pan, add lemon and white wine and whisk to loosen bits from bottom of the pan. Add butter and whisk about 10-20 seconds until sauce comes together. Pour sauce on top of fish through a strainer.

Serving Ideas

Serve with white and wild rice pilaf and sauteed spinach. Garnish fish with parsley and lemon slices.
