Ingredients (Serves 4)
|2||teaspoons||Fresh Tarragon (minced)|
|2||teaspoons||Prepared Mustard (either Dijon or Whole Grain or Mixture of both)|
|1/4||teaspoon||Fresh Ground Black Pepper|
|2||Scallions (Thinly Sliced)|
Preheat oven to 400 degrees.
Combine first three ingredients in a small bowl. Transfer flounder fillets to resealable plastic bag and add marinade, making sure all fillets are evenly covered. Marinate in refrigerator for at least 30 minutes and up to 4 hours.
Remove fish from bag and lay in ovenproof dish with some of the yogurt marinade to cover. Bake for until cooked through, about 8 minutes.
Garnish with the scallions and serve.
