Flounder with Tarragon Dijonnaise
Ingredients (Serves 4)

| 2 | teaspoons | Fresh Tarragon (minced) |
| 2 | teaspoons | Prepared Mustard (either Dijon or Whole Grain or Mixture of both) |
| 1/4 | teaspoon | Fresh Ground Black Pepper |
| 1/2 | cup | Yogurt |
| 4 | Flounder FIllets | |
| 2 | Scallions (Thinly Sliced) |
INSTRUCTIONS
Preheat oven to 400 degrees.
Combine first three ingredients in a small bowl. Transfer flounder fillets to resealable plastic bag and add marinade, making sure all fillets are evenly covered. Marinate in refrigerator for at least 30 minutes and up to 4 hours.
Remove fish from bag and lay in ovenproof dish with some of the yogurt marinade to cover. Bake for until cooked through, about 8 minutes.
Garnish with the scallions and serve.
