Crab, Mushroom and Cheese Quiche

Ingredients

  • 1 pre-made pie crust
  • 1 1/2 cups swiss cheese -- grated
  • 1 onion -- diced medium
  • 2 tbsp butter
  • 1 cup snow crab meat
  • 1 tsp thyme leaves -- crushed
  • 4 eggs
  • 1 1/2 cups half and half
  • 3 tbsp flour, all-purpose
  • 1/4 tsp salt
  • Fresh cracked pepper
  • Pinch nutmeg
  • Pinch paprika

Instructions

Preheat oven to 375 degrees. Place crust in pie plate and crimp edges. Saute onions and mushrooms in butter over medium heat in a saute pan for about 5 minutes.
Season with thyme. Mix well and cool slightly. Stir in crab. Place cheese in bottom of crust. Then add mushroom and crab mixture. Beat together eggs, flour, nutmeg, salt and pepper. Pour over mushroom layer and sprinkle with paprika. Bake at 375 degrees for 40 to 45 minutes, or until solid in center.

Serving Ideas

Serve with green salad and a plate of fresh strawberries.

Other Options

Add 1 small diced zucchini, or any color bell pepper, diced and then sauteed.
