Grilled Crab and Cheese Sandwich

Ingredients

  • 1 cup dungeness crab meat
  • 3 tbsp mayonnaise or tartar sauce
  • 1/2 cup medium cheddar cheese -- grated
  • Freshly cracked pepper
  • Bread -- sliced and buttered

Instructions

In a small bowl, mix crab, mayonnaise or tartar sauce, cheese and pepper. Divide between 4 sandwiches. Butter outside of sandwich. Heat large saute pan to medium heat and cook on both sides, until cheese is melted and bread is golden brown.

Serving Ideas

Serve with spicy coleslaw, fresh fruit, lemon or lime and a relish tray.
Make open face sandwich in a toaster oven. Add sliced tomato and avocado and put on a kaiser roll.
Party appetizer: top crostini with filling, sprinkle with fresh grated parmesan cheese and place under the broiler until hot and bubbly. Garnish with finely chopped parsley and/or finely chopped red bell pepper.
