Cod Wrapped with Pancetta
Ingredients
- 8 cod loins
- 8 thin slices of pancetta
- 1 tbsp olive oil
- Salt and pepper
Instuctions
Season cod, wrap each fillet with a slice of pancetta.
Place olive oil in saute pan over medium heat, turning cod until it is browned on all sides (about 5 minutes).
Serving Ideas
Serve with mushroom risotto and green salad with fresh orange segments.
Also great with hollandaise sauce.
