Cod Pitas

Ingredients

  • 8 cod filletd -- cooked as directed
  • 4 pitas, softened -- cut in half cross-wise
  • 1 large tomato -- chopped
  • 1 celery stalk -- chopped
  • 2 tbsp red onion -- chopped
  • 1 cup lettuce -- chopped
  • 1/2 cup red bell pepper -- chopped
  • 1/2 cup monterey jack cheese -- grated
  • Salt and pepper
  • Ranch dressing

Instructions

Mix tomatoes, celery, onion, lettuce, bell pepper, cheese, salt and pepper.
Toss with ranch dressing.
Divide between pita halves.
Place one fillet in each half.

Serving Ideas

Serve with sliced watermelon and grapes.

Other Options

Place fresh basil leaves or marinated jalapeno slices in pita.
Substitute tzatziki sauce or a spicy vinaigrette for ranch dressing.
