Cod Fish Tacos
Ingredients
- 12 corn or flour tortillas
- 1 tbsp canola or other vegetable oil
- 12 cod fillets -- cooked according to package
- Green leaf lettuce -- shredded
- Salsa
- Tartar sauce
Instructions
Heat oil in large saute pan over medium heat. Briefly saute tortillas for about 10 seconds on each side. Place on plate and cover to keep warm. Place fish on tortillas and add remaining ingredients. Fold in half and serve.
Serving Ideas
Serve with tropical fruit platter (mango, papaya, pineapple, etc.)
Great with corn and black bean salsa.
Other Options
Add chopped onions, grated cheese, black olives, and diced tomatoes.
Substitute coleslaw for lettuce.
