Tropical Baked Cod Loins

Ingredients

  • 4 cod loins
  • Salt, pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 scallions -- sliced
  • 1/4 cup white wine
  • 1/4 cup orange juice
  • 2 tsp fresh ginger -- grated
  • 1 cup fresh pineapple, diced (or canned, unsweetened chunks, drained)

Instructions

Preheat oven to 350 degrees.
Place oil and butter in saute pan over medium heat. Saute scallions for 1 minute. Add wine, orange juice, ginger and bring to boil. Remove from heat and stir in pineapple. Place fish in prepared baking dish. Spoon sauce over top and cover with foil. Bake for 10 to 12 minutes or until fish just begins to flake. Place fish on platter. Pour remaining liquid from baking dish into saute pan. Reduce by half and pour over fish.

Serving Ideas

Serve with garlic mashed potatoes, green beans with mushrooms and coconut cream pie.
Serve an Asian crudite platter (snap peas, red bell pepper, radishes, etc) as a starter. Serve fish with thai or jasmine rice, steamed bok choy or sauteed swiss chard and coconut cream pie.
