South of the Border Catfish

Ingredients

  • 6 catfish fillets
  • 1/2 cup sour cream
  • 1 tbsp lime or lemon juice
  • 1/2 tsp cumin powder
  • 1/2 tsp chili powder
  • 1 1/2 cups corn chips -- finely chopped
  • 2 tbsp melted butter
  • Salt and pepper

Instructions

Preheat oven to 450 degrees.
Combine sour cream, lime or lemon juice, cumin and chili powder.
Place fish in mixture. Coat well and let sit for 10 to 20 minutes.
Remove and coat fish with chips.
Place in greased baking dish.
Pour butter over top and bake for 8 to 10 minutes or until fish flakes.
Add salt and pepper to taste.

Serving Ideas

Serve with chopped red onion, salsa, cilantro, mexican rice, green salad, and sliced fresh pineapple.

Other Suggestions

Place sliced black olives and medium cheddar and jack cheese over top during the last 3 to 4 minutes and broil.
