Grilled Ahi Tuna with Cajun Spices and Cilantro-Lime Cream
Ingredients (Serves 4)

| 1/4 | cup | sweet paprika |
| 1 1/4 | teaspoons | sea salt |
| 1 | teaspoon | onion powder |
| 1 | teaspoon | garlic powder |
| 3/4 | teaspoon | dried oregano |
| 3/4 | teaspoon | dried thyme |
| 1/2 | teaspoon | cayenne pepper |
| 1/2 | teaspoon | black pepper |
| 1/4 | teaspoon | white pepper |
| canola oil or cooking spray | ||
| 4 | ahi tuna fillets | |
| cilantro lime cream |
Preperation Method
- Preheat gill pan over high heat. Turn on kitchen fan.
Make the seasoning mix:
- Combine first nine ingredients in a small bowl; set aside.
- Pat fillets dry with paper towels. Brush a little oil on fillets or spray with cooking spray. Generously season fillets with seasoning mix to taste.
- Cook Ahi 2-3 minutes per side, until desired doneness. Make a small pool of cilantro-lime cream in the center of each plate. Place Ahi on top of each pool, drizzle with a little more cilantro-lime cream and serve.
Cilantro Lime Cream

| 1/2 | cup | cilantro, leaves and a few stems -- tinse of grit, chopped |
| 1/2 | teaspoon | hot chile pepper such as jalopeno or serrano -- seeds and membrane removed, minced |
| zest from 1/2 lime | ||
| juice from 1/2 lime | ||
| 1/3 | cup | sour cream |
| sea salt |
Preperation Method
- Place all ingredients in a blender and process until smooth.
- Yield: 1/3 cup
