There are over 3 million people in the United States alone that suffer from Celiac Disease, and 97% of those people go undiagnosed. There are also a handful of people that choose to be gluten free – they must be crazy right? Well, I wouldn’t go that far…

These days, everyone is talking about how important it is to “go green” or “eat sustainably,” which can be defined in many ways. This means “being green” gets kind of confusing, if not downright meaningless, depending on what exactly you’re talking about. For example, in communities that don’t have curbside-recycling pick-up, is it “greener” to burn the gas necessary to drive several miles out of the way to a recycling center or simply throw your family’s recyclables into the garbage?
